Ingredients
  • 1/2 medium onion (diced about 3/4 cup)
  • 1.5 pounds boneless skinless chicken thighs trimmed and cut in half
  • 1 pound boneless, skinless chicken breasts trimmed and cut in half
  • 1 packet Good Seasons Zesty Italian Seasoning
  • 1 teaspoon Ground Mustard Seed
  • 2 tablespoon Worcestershire sauce
  • 2 tablespoon apple cider vinegar optional for more zest
  • 18 ounces barbecue sauce
  • 10 hamburger buns

Instructions
  1. Add onions and chicken halves to pressure cooker cooking pot.
  2. Sprinkle on zesty Italian dressing, ground mustard. Pour in Worcestershire Sauce and Barbecue Sauce. Lightly mix the sauce to cover the top of chicken.
  3. Lock on lid and close pressure valve. Cook at high pressure for 4 minutes. When beep sounds, wait 5 minutes and then carefully release the rest of the pressure.
  4. Use an electric hand held mixer, pulled meat claws or two forks and shred the chicken. The liquid will absorb into the chicken as it is being shredded.
  5. Pile Instant Pot Zesty BBQ Chicken onto hamburger buns and top with slices of dill pickles.

    I didn’t have enough chicken. And I only used boneless skinless chicken breasts… Didn’t use the italian seasoning…. It still turned out great!! loved it!!!

    This recipe was very disappointing. The cooking time is completely wrong. The chicken was still partially raw at the end of the four minutes. I had to cook it for two more eight minute cycles before it was edible. By that time, the chicken was hard and runbery and difficult to shred. The only way to shred it was with a handmixer, in that resulted in a pulpy mess. The fluid DID NOt absorb into the chicken. Even worse, the cooking cycles were interrupted multiple times by burn errors.

    This does not work with chicken tenderloins. After 2 minutes my pot said “burn”. After releasing the steam and checking, it was just stuck to the pan a little but not bad. But then I had to finish it in the oven because the lid wouldnt go back on. Epic fail 🙁
