  • 14 oz can diced tomatoes undrained
  • 6 oz can diced green chiles
  • 15 oz can black beans drained and rinsed
  • 2 tsp chili powder
  • 3 1/2 cups chicken broth
  • 6 eggs lightly beaten
  • 6-8 flour tortillas up to  7” diameter

Instructions
  1. Add rice, tomatoes, chiles, beans, chili powder and chicken broth to the pot. Stir to combine.
  2. Close the lid.
  3. Using the display panel press the BROWN RICE Smart Program, then press START.
  4. When the Smart Program completes, press CANCEL. Press the lid release on the lid handle down, then carefully open the lid. 
  5. Stir the rice, then pour the beaten eggs over the rice. Add the tortillas to the Steamer Tray and insert it into the pot. 
  6. Close the lid, then press the STEAM Smart Program, set the time to 10 minutes, then press START.
  7. When the Smart Program completes, check eggs for desired doneness. Season to taste. 
  8. Fold the egg mixture into the flour tortillas and serve warm.
