Instructions
  1. Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  2. When oil gets hot, brown the cut sausage on both sides. Transfer browned meat to a shallow dish and cover loosely with foil.
  3. Add onion, carrots and celery to the pot and saute until onion is soft, 3-4 minutes.
  4. Add broth to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  5. Put the sausage back into the pot, add sorted and rinsed beans and stir to combine.
  6. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  7. Using the display panel select the MANUAL function*. Use the +/-keys and program the Instant Pot for 60 minutes.
  8. When the time is up, let the pressure naturally release for 15 minutes, then quick-release the remaining pressure.
  9. Serve hot, alongside fresh cornbread (optional).

Really nice for a cold winter day. Used a spicy smoked chicken sausage and enjoyed the extra kick. A new favorite.

I made this exactly as thr recipe states. The beans were dry and hard, not sure if over or undercooked. I used small pintos. I feel like the beans should be cooked first.

The ingredient list mentions thyme, but it is not mentioned in the instructions. I added the thyme just before I turned on the pressure cook. Also, there is no mention of either salt or pepper. Four cups of liquid calls for at least one teaspoon of salt in my book.
