Ingredients
  • 2tbsp vegetable oil
  • 1 large onionchopped
  • ½cup chopped roasted peanuts
  • 1-½tbsp minced fresh ginger
  • 4cloves garlicminced (about 1 tablespoon)
  • 1tsp salt
  • 3cups vegetable broth
  • cup unsweetened peanut buttercreamy or chunky
  • 2 sweet potatoespeeled and cut into ½-inch cubes
  • 1can (28 ounces) whole tomatoesdrained and coarsely chopped
  • 1 bunch kale or Swiss chardstemmed and shredded
  • ¼tsp ground red pepper
Instructions
  1. Press Sauté; heat oil in pot. Add onion; cook and stir 5 Minutes or until softened. Add peanuts, ginger, garlic and salt; cook and stir 1 Minute. Stir in broth and peanut butter until blended. Add sweet potatoes, tomatoes, kale and red pepper; mix well.
  2. Secure lid and move pressure release valve to Sealing position. Press Pressure Cook or Manual; cook at High Pressure 3 Minutes.
  3. When cooking is complete, use quick release.
