Ingredients
- 2 tbsp vegetable oil
- 1 large onion chopped
- ½ cup chopped roasted peanuts
- 1-½ tbsp minced fresh ginger
- 4 cloves garlic minced (about 1 tablespoon)
- 1 tsp salt
- 3 cups vegetable broth
- ⅓ cup unsweetened peanut butter creamy or chunky
- 2 sweet potatoes peeled and cut into ½-inch cubes
- 1 can (28 ounces) whole tomatoes drained and coarsely chopped
- 1 bunch kale or Swiss chard stemmed and shredded
- ¼ tsp ground red pepper

- Press Sauté; heat oil in pot. Add onion; cook and stir 5 Minutes or until softened. Add peanuts, ginger, garlic and salt; cook and stir 1 Minute. Stir in broth and peanut butter until blended. Add sweet potatoes, tomatoes, kale and red pepper; mix well.
- Secure lid and move pressure release valve to Sealing position. Press Pressure Cook or Manual; cook at High Pressure 3 Minutes.
- When cooking is complete, use quick release.
