Ingredients
- 2 cups rice cooked
- ¼ medium onion
- 1 handful green onions
- 2 eggs
- ¼ cup vegetable broth
- 2 tsp sake
- 2 tsp soy sauce
- 1 handful shitake mushrooms or mushrooms
- carrot chopped
- ½ cup tofu cut into squares
- Salt and pepper to taste

Instructions
- Place the stainless steel inner pot inside the Instant Pot®. Chop the onions, carrot, and mushrooms.
- Add the oil to the steel inner pot, put the ingredients in, press Saute, and set time to 3 Minutes.
- Mix the rice with the egg and beat.
- Add the rice mixture and stir constantly so it doesn't burn. Add the tofu and continue stirring.
- Add the sake and vegetable broth and cook for 4 more minutes.
- Add the soy sauce, season with salt and pepper. Cook, stirring with a wooden spoon, for 4 more minutes.
- Then press Cancel and your vegetarian yakimeshi is ready to enjoy.
