Ingredients
  • 3 tbsp olive oil
  • 1 lb (450 g) boneless turkey breast cut into strips
  • 2 medium bell peppers diced
  • 1 whole green onion sliced
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp chili powder
  • ½ cup Water
  • 1 tsp lemon juice

Instructions
  1. Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 3 Minutes. Add the olive oil. Once hot, add the turkey and brown on both sides. When done, press Cancel.
  2. Add the pepper, green onions, salt, pepper, chili pepper, and ½ cup of water. Stir.
  3. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set time to 7 Minutes.
  4. When done cooking, press Cancel and turn the steam release handle to Venting. Once all the steam has been released, open the lid and remove the turkey and peppers. Add the lemon juice and mix. Serve on toasted wheat tortillas with guacamole and mango cubes.
