Tomato Sauce with Artichokes and Olives

  • 2/3cup olive oil extra virgin
  • 1medium onion diced
  • 3cloves garlic minced
  • 32oz artichoke hearts2 cans 16 oz each drained and cut in half
  • 1/2cup Pitted kalamata olives Whole
  • 1/4cup Fresh basil Washed and chopped
  • 46oz crushed tomatoes2 Cans 28 oz each
  • 2tbsp tomato paste
  • 1/2tbsp Oregano Dried
  • 1/2tsp salt
  • 1/2tsp pepper
  1. Set the Instant Pot to saute. Add olive oil and wait one minute to heat up.
  2. Add the onion and garlic, saute for one minute. Stir often.
  3. Add the artichokes, olives, basil and saute for one more minute, stirring often.
  4. Add the crushed tomatoes, tomato paste, oregano, salt, and pepper. Stir well. Cover the Instant pot and lock it in.
  5. Set the manual or pressure cook timer for 10 minutes. Make sure the timer is set to “sealing”.
  6. Once the timer reaches zero, quick release the pressure.
