Our recipe for Instant Pot® Tasty Pulled Pork has only a few ingredients and takes just 5 minutes to pull together. Discover how to put this simple pulled pork recipe together with just pork loin, our roasted red pepper cooking soup, chili powder, brown sugar and cider vinegar. All ingredients go right into the Instant Pot® where the delicious flavor gets locked in. We’ve used a boneless pork loin, which is leaner than a pork shoulder, but stays super-moist in the Instant Pot® and is much easier to shred since there’s no waste. Serve this pulled pork on hearty buns to soak up every drop of the delicious sauce.

Instructions
  1. Place the onion into a 6 quart Instant Pot®. Cut the pork in half lengthwise and season with salt and pepper. Sprinkle the pork with the brown sugar and chili powder. Place the pork into the Instant Pot®. Stir the soup and vinegar in a small bowl. Pour the soup mixture over the pork.
  2. Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 40 minutes (timer will begin counting down once pressure is reached- it takes about 15 minutes). When done, press Cancel and use the quick release method to release the pressure.
  3. Remove the pork to a cutting board. Select the Saute setting. Cook the sauce mixture for 5 minutes or until reduced. While the sauce is reducing, shred the pork. Return the pork to the cooker and stir. Season to taste. Serve the pork mixture on the buns.
Recipe Notes

For smoky flavor, substitute 1 tablespoon applewood rub seasoning or 2 teaspoons smoked paprika for the chili powder. Or omit the chili powder and stir in 1 tablespoon chopped chipotle chile in adobo with the soup. Try serving the pork on the buns, topped with coleslaw. You can buy it prepared, or mix 1 1/2 cups coleslaw mix with 2 tablespoons mayonnaise and 1 teaspoon apple cider vinegar.
