Ingredients
  • 2 bars Firm tofu
  • 2 tbsp garlic minced
  • 1/2 cup Ginger sliced
  • 50 g scallion green parts
  • 70 g tamari
  • 455 g shiitake mushrooms quartered
  • 2 stem leek rinsed, quartered lengthways, chopped
  • 225 g carrot peeled, small
  • 4 celery ribs chopped
  • 1 head Napa cabbage chopped
  • 960 ml vegetable stock
  • 2 tbsp extra-virgin olive oil
  • 45 g Gluten-free panko breadcrumbs
  • kosher salt as needed
  • black pepper as needed, freshly ground

Instructions
  1. Place all the ingredients in the cooker with the tofu on top for the braise.
  2. Lock and secure the lid. Pressure cook for 10 minutes on low.
  3. Once braised, top with the EVOO, green scallions, Panko, salt, and pepper
  4. Air fry for 5 minutes until gold, brown, and delicious.
