  • 3 lb (1.5 kg) suadero + fat ask the butcher for this when preparing your meat
  • salt
  • avocado oil
  • 4 cups (1 L) cow's milk
  • 4-5 bay leaves
  • 5 large peppers
  • ½ onion cut into chunks
  • 3 cloves garlic
  • 3 lemons peels only
For serving as garnish:
  • Longaniza sausage
  • tortillas
  • fresh cilantro finely chopped
  • finely chopped onion
  • hot sauce
  • lemons

Instructions
  1. Add salt generously all over the suadero.
  2. Place the stainless steel inner pot inside the Instant Pot®. Press Saute and when Hot appears, add the avocado oil and fat. Let release more fat and brown a little and add the suadero. Sear. Add the milk, bay leaves, peppers, onion, garlic, and peels.
  3. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Meat/Stew and set time to 35 Minutes.
  4. When done, press Cancel and turn the steam release handle to Venting.
  5. Remove the meat and cut (it falls apart on its own!). Remove the liquid left in the pot. Press Saute. Add a little more avocado oil and brown the longaniza sausage and suadero meat.
  6. Assemble the tacos and serve with the accompaniments.
