Stuffed Peaches

Ingredients
- 4-5 medium peaches ripe but firm
- ½ cup almond flour
- ⅟3 cup light brown sugar
- 2 tbsp coconut oil or melted butter
- ½ tsp cinnamon
- sliced almonds as garnish
- Plain yogurt or vanilla ice cream to serve on the side

- Wash peaches and dry well. Cut about
⅜ in (½ cm) from top of each peach; loosen the sides of the pit with a sharp knife; then remove the pit with a spoon. - Mix oat flour, sugar, coconut oil, and cinnamon. Fill the peaches with the mixture.
- Pour
1 cup of water into Instant Pot® inner pot, then insert the rack and line with a piece of aluminum foil. Arrange stuffed peaches on foil. - Put the lid on the pot, turn to lock. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set time to 3 Minutes.
- When done cooking, press Cancel and turn the steam release handle to Venting. Once all the pressure has been released, open the lid. Remove peaches and let rest 15 Minutes before serving.
- Serve the peaches topped with sliced almonds, with plain yogurt or vanilla ice cream on the side.
