For Dry Rub:
  • 2 tbsp dark roast instant coffee
  • 1/2 tbsp smoked paprika
  • 1 tsp chilli flakes
  • 1 tsp chilli powder
  • 1/2 tbsp salt
  • 1/2 tbsp ground black pepper
  • 1/2 tsp cumin seeds
For Roast:
  • 3 lbs beef for roast
  • 1/2 cup dark roast coffee brewed
  • 3 tbsp olive oil
  • 1 cup beef stock
  • 1 onion sliced
  • 6 mushrooms sliced
  • 2 tbsp orange juice
  • 2 tbsp orange zest
  • 2 tbsp balsamic or red wine vinegar

Instructions
  1. Mix ingredients for dry rub in a large mixing bowl. Rub all sides of the meat with the mixture and set aside.
  2. Select SAUTÉ-HIGH, set time to 15 minutes, then press START. Add olive oil to the Inner Pot.
  3. When the oil is hot, add and sauté onions for 2-3 minutes.
  4. Add sliced mushrooms and continue to sauté for 2 more minutes.
  5. Add vinegar, orange zest, orange juice, brewed coffee, chicken stock and then beef to the pot.
  6. Press CANCEL, then secure lid for pressure cooking.
  7. Select PRESSURE COOK-Pressure Level High, set time to 50 minutes, then press START.
  8. Allow a 10 minute Natural Release, then Quick Release remaining pressure. Press CANCEL to turn off.
  9. Open lid and carefully take out the meat. Let it rest for 10 minutes and then slice. Add some of the vegetables in the pot on a plate. Place beef slices and some of the liquid on top before serving.

Chef`s Tip: For thoroughly cooked, easy-to-pull pot roast result, the beef can be cut in big chunks before cooking.
