Ingredients
Dry Rub:
  • 2 tbsp dark roast instant coffee
  • 1/2 tbsp smoked paprika
  • 1 tsp chilli flakes
  • 1 tsp chilli powder
  • 1/2 tbsp salt
  • 1/2 tbsp ground black pepper
Roast:
  • 3 lbs beef for roasting
  • 3 tbsp olive oil
  • 2 tbsp balsamic or red wine vinegar
  • 1 onion sliced
  • 6 mushrooms sliced
  • 1/2 cup dark roast coffee brewed
  • 1 cup beef stock
  • 2 tbsp orange juice
  • 2 tbsp orange zest

Instructions
  1. Mix Dry Rub ingredients in a large mixing bowl. Rub mixture all over beef.
  2. Select SAUTÉ, HIGH. Select START. Add olive oil to inner pot.
  3. When the oil is hot, add and sauté onions for 2-3 minutes.
  4. Add sliced mushrooms and sauté for 2 more minutes.
  5. Add vinegar, orange zest, orange juice, brewed coffee, beef stock, and beef to the pot.
  6. Press CANCEL. Secure lid for pressure cooking.
  7. Select PRESSURE COOK, HIGH for 50 minutes (00:50). Select START.
  8. Open lid and carefully take out the beef. Let it rest for 10 minutes, then slice.
  9. Place vegetables from the pot onto a plate, lay beef slices on top. Ladle some of the sauce over beef and vegetables.

TIP: Cut beef into chunks before cooking for a thoroughly cooked,pull-apart pot roast.
