Ingredients
  • 1 1/2 cup brown rice
  • 1 1/2 cup Water
  • 1 cup Corn – cooked and chilled
  • 1 cup Black beans – canned or Pressure Cookerd see Notes for instructions to pressure cook beans
  • 1 Small red onion or 1/2 large onion finely diced
  • 1 red pepper small dice
  • 1/2 cup cilantro or parsley chopped
Dressing:
  • 1/3 cup olive oil
  • 3 tbsp lime juice freshly squeezed
  • 1 garlic clove finely minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1 tbsp honey

Instructions
  1. Add brown rice and water to inner pot and stir.
  2. Secure lid for pressure cooking. Select RICE-Pressure Level High, set time to 30 minutes and press START.
  3. Allow a 10 minute Natural Release, then Quick Release remaining pressure. Press CANCEL to turn off.
  4. Spoon out rice into a fine strainer, and rinse cooked rice under cold water to stop the cooking. Drain well.
  5. In a large bowl combine the corn, beans, onion, red pepper and cilantro.
  6. In a separate bowl whisk together all the dressing ingredients.
  7. Add the rice to the vegetables and pour dressing on top.
  8. Toss well to combine and serve.
Recipe Notes

Black Beans
Cooking time: 20 minutes
Pressure Release: Natural Release 10 minutes then Quick Release

1 cup Dry black beans
1 cup water

1. Add water and beans to inner pot.
2. Select PRESSURE COOK-Pressure level HIGH, set time for 20 minutes, then press START.
3. Allow a 10 minute Natural Release, then Quick Release remaining pressure.
4. Rinse beans under cold water to stop the cooking.
