Ingredients
- 2 1/2 lbs pork belly skinless
- 6 cloves garlic mashed
- 1 1/2 cups beef stock
- 1/2 cup tomato sauce
- 1 tsp Sweet chili sauce
- 1 tsp soy sauce
- 1 tbsp honey
- 1 tsp red chili flakes
- scallions chopped for garnishing

Instructions
- Place the pork belly in the inner pot, add in the mashed garlic and beef stock.
- Close the Pressure Cooking Lid on the pot and set to VENT.
- Select SLOW COOK-Custom-High for 5 hours.
- When done, carefully open the Pressure Cooking Lid. Remove the pork from the inner pot, place it on top of a cutting board and pat dry, cut in 1-inch cubes. Discard the liquid and rinse the inner pot.
- Stir together the tomato sauce, sweet chili sauce, soy sauce, honey and red chili flakes in the inner pot. Add pork belly cubes and stir to coat evenly.
- Close the Pressure Cooking Lid on the pot and set to VENT.
- Select SLOW COOK-Custom-High for 1 hour. When done carefully open the Pressure Cooking Lid.
- Serve and enjoy!
Recipe Notes
Optional: If you want a little bit of crispiness and enhance the flavor, Air fry the pork belly bites at 400 F for 6 minutes.
