Instructions
  1. Place the pork belly in the inner pot, add in the mashed garlic and beef stock.
  2. Close the Pressure Cooking Lid on the pot and set to VENT.
  3. Select SLOW COOK-Custom-High for 5 hours.
  4. When done, carefully open the Pressure Cooking Lid. Remove the pork from the inner pot, place it on top of a cutting board and pat dry, cut in 1-inch cubes. Discard the liquid and rinse the inner pot.
  5. Stir together the tomato sauce, sweet chili sauce, soy sauce, honey and red chili flakes in the inner pot. Add pork belly cubes and stir to coat evenly.
  6. Close the Pressure Cooking Lid on the pot and set to VENT.
  7. Select SLOW COOK-Custom-High for 1 hour. When done carefully open the Pressure Cooking Lid.
  8. Serve and enjoy!
Recipe Notes

Optional: If you want a little bit of crispiness and enhance the flavor, Air fry the pork belly bites at 400 F for 6 minutes.
