Slow Cooked Lazy Day Beef Stew

Ingredients
  • 1 large onionchopped
  • 3 garlic clovesminced
  • 1 1/2cups beef or chicken broth
  • 2tbsp Worcestershire sauce
  • 2tbsp soy sauce
  • 1tbsp brown sugar
  • 1tbsp vinegarany kind
  • 1tsp salt
  • 1/2tsp pepper
  • 1 – 1 1/2lbs stew beeffresh or frozen
  • 3 – 4 red-skinned potatoescut into 1 inch pieces
  • 2 – 3 carrotscut into 1 inch pieces
  • 1cup frozen peas
  • 2tbsp cornstarch
  • 3tbsp Water
  • 2tbsp chopped fresh parsleyoptional
Instructions
  1. Add everything except peas, cornstarch, water and parsley to your Instant Pot.
  2. Set to Slow Cook- 8 hours.
  3. When cook time is finished, Add frozen peas (they will thaw using the residual heat).
  4. Mix cornstarch and water to make a slurry and stir into the stew. Add as much or as little as needed to reach desired consistency.
  5. Garnish with Parsley and enjoy!
