Ingredients
- 4 scallions thinly chopped
- 1 lb extra firm tofu cut into 1/2-inch cubes
- 1/4 cup Hoisin Sauce
- 2 tbsp miso paste
- 1 tsp honey or brown sugar
- 1 tsp rice vinegar
- 2 tsp ground ginger or 1/2 tsp fresh ginger, grated
- 2 garlic cloves minced
- Half red finger pepper seeded and small diced
- 1/4 cup vegetable broth or water
- 1 tsp sesame oil
- 1 tsp sesame seeds

Instructions
- Add the hoisin, miso paste, honey, rice vinegar, ginger, garlic, red finger pepper, sesame oil, sesame seeds and vegetable broth. Whisk together.
- Add the cubed tofu into the pot; stir in.
- Close the lid. Set valve to release.
- Select SLOW COOK-Low and set the time to 3 hours. Press START.
- Once the cooking cycle is done, press CANCEL.
- Serve the tofu with sauce from bottom of pot and garnish with extra scallions, red finger pepper and sesame seeds if desired.
