Ingredients
  • 3-4 lb leg of lamb bone-in
  • 5 tbsp olive oil
  • 2 tbsp salt
  • 1 tbsp pepper
  • 6 garlic cloves minced
  • 2 tbsp fresh rosemary minced (2 tsp dried)
  • 1 tbsp fresh oregano minced (1 tsp dried)
  • 4 fresh thyme sprigs minced (1 tsp dried)
  • 3/4 tsp paprika
  • 1 lemon juiced
  • 1 1/2 cups chicken broth
  • 1 lb pearl onions or shallots

Instructions
  1. Rinse the lamb with cold water and pat dry with paper towel. Season with salt and pepper and using your hands rub seasoning all over the lamb to coat it well.
  2. Select SAUTE – High – 30 minutes and press START.
  3. When preheated, add 2 tbsp of oil to the inner pot, and sear the lamb on all sides for about 5 minutes per side.
  4. Transfer the lamb to a plate and set aside.
  5. Press CANCEL.
  6. In a bowl, combine 3 tbsp olive oil, garlic, rosemary, oregano, thyme, paprika and lemon juice.
  7. Pour the herb mixture over the lamb and rub it all over to coat it. You can use your hands or a spoon if you prefer.
  8. Add the chicken broth and onions to the pot and place the lamb on top of the onions.
  9. Secure the lid on the pot and set the pressure release to VENT.
  10. Select SLOW COOK – High, set time for 6 hours and press START.
  11. Once cooking time is complete, open the lid and transfer the lamb to a serving platter. Using a slotted spoon, scoop out the onions and place them around the lamb. Tent with foil until ready to serve.
