- Onion diced
- Garlic minced
- 1 pinch salt
- 1 pinch of ground pepper
- 1 red pepper diced
- 1 tsp paprika
- 1 tsp cayenne pepper
- Tomato sauce/paste
- 4 eggs
- Parsley to taste

Instructions
- Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 30 Minutes.
- Pour in the oil and, once hot, add the onion, garlic, salt, ground pepper, red pepper, paprika, and cayenne pepper. With a silicone spatula, stir to incorporate the ingredients.
- Add the tomato paste and using a measuring cup, add the eggs one by one, making sure not to let them touch. Add parsley to taste.
- Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing.
- Once the time is up, press Cancel and turn the steam release handle to Venting. Remove the Instant Pot® lid and serve.
