Ingredients
For the pasta:
  • 2tbsp of oil
  • 1 onion finely diced
  • 1tbsp garlic paste
  • 5tbsp yellow pepper
  • 1cup seafood sauce
  • 1/2cup chicha de jora ( corn beer)
  • Salt, pepper, cumin, oregano (to taste)
  • 1lb (450 g) seafood
  • lb (300 g) noodles of your choice, raw
  • Chopped culantro (coriander, UK)
For the seafood sauce:
  • 1 onion peeled and cut into medium pieces
  • 1 tomato chopped into medium pieces
  • 2 cloves garlic
  • 1⅓ lb (300 g) crayfish shells
  • 3cups of water
Instructions
  1. Insert the stainless steel bowl into the Instant Pot®. Add oil and program Saute and adjust the time to 5 Minutes . After the first 2 Minutes, add onion, garlic, tomato, carcass and water.
  2. Put on and lock the lid of the Instant Pot®. Make sure the steam release valve is turned to “Sealing”. Press the Soup/Brot function and set the time to 10 Minutes.
  3. After the time , release the steam (by turning the valve). Once all the pressure has been released, open the lid , blend all the preparation, pass through a strainer and reserve.
  4. Again insert the stainless steel bowl into the Instant Pot®. Add oil, program Saute and adjust the time to 5 Minutes . After the first minute, add onion, garlic and yellow pepper and fry. Again, adjust the time to 5 Minutes in the Soup/Brot option and add seafood sauce, chicha de jora, seasonings and cook.
  5. With 20 Seconds to go until time runs out, add shellfish. Mix everything with the sauce, and add pasta of your choice. Add chopped cilantro and serve.
