Roasted Red Cabbage with Bacon and Onions

Cabbage, onions, and bacon are a delicious combination when roasted together for a dish with caramelized sweetness from the vegetables and bites of savory smoky bacon all throughout. Make this and Golden Buttery Mash (page 233) as sides for a store-bought rotisserie chicken for a weeknight dinner. This recipe also works well with Brussels sprouts in place of cabbage, quartered if large or halved if on the smaller side.

- 1/2 medium red cabbage cored and cut into 1-inch squares, 1 pound
- 4 slices center-cut bacon cut into 1/2-inch pieces
- 1 yellow onion diced
- 1/4 tsp kosher salt

- Preheat the air fryer on ROAST at 350°F and set the cooking time for 15 minutes if using a toaster oven—style air fryer or 12 minutes if using a basket-style air fryer. If using a toaster oven—style air fryer, line the cooking pan with parchment paper or aluminum foil.
- Spread out the cabbage on the lined cooking pan or in the air frying basket. Sprinkle the bacon, onion, and salt evenly on top of the cabbage.
- Roast the cabbage in the preheated air fryer. When the turn food notice comes on (or two-thirds of the way through the cooking time), give everything a stir to combine.
- When the cooking program ends, transfer the cabbage to a serving dish and serve right away.
