Ingredients
  • 3 ripe nectarines
  • 1 tbsp Sweet Freedom Fruit Syrup Or use honey, agave, maple syrup, or sweetener of choice. 
For the frozen yogurt:
  • 1 unsweetened plain Greek yogurt or coconut yogurt
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tbsp syrup or sweetener of choice

Instructions
  1. Wash nectarines well. Cut into halves and remove pits.
  2. Place nectarine-halves on a platter and pour the fruit syrup over them.
  3. On the Instant Vortex control panel, press Roast. Set time to 8 Minutes and temperature to 400°F (205°C).
  4. Once Add Food appears on the display, place nectarine-halves side by side, directly on the rack. Close the basket.
  5. When there’s 4 minutes to go and the message Turn Food appears; turn the nectarines so they cook well on both sides.
  6. When the time is up, open the drawer and press Cancel. Leave the nectarines there until ready to serve.
  7. While the nectarines are cooking, you can prepare the frozen yogurt to accompany the nectarines: put all the ingredients in a small bowl, stir until everything is incorporated and place in the refrigerator for half an hour.
  8. Serve the roasted nectarines with the frozen yogurt. The mix of the sweet, warm nectarines with the smooth, citrusy, frozen yogurt makes for the perfect summer dessert.
