Ingredients
- 2 cups cooked rice
- 2 small eggs
- 2 large carrots
- Salt and pepper
- Chopped parsley (leaves only)
- Enough flour to form the fritters
- Greek yogurt with curry for dipping

Instructions
- In a bowl, mix the cooked rice, egg, salt, pepper, grated carrot, chopped parsley and flour, and form the fritters.
- On the Instant Vortex control panel, press Air Fry, then set time to 10 Minutes and temperature to 355˚F (180˚C) . Press Start .
- Once Add Food appears on the display, add the fritters. Close tray and let cook.
- When done, serve immediately with Greek yogurt mixed with curry powder.
- For crispier fritters, instead of 10 Minutes, make it 13 Minutes and check.
