Ingredients
Pulled Pork
  • 2 lb pork tenderloin sliced into 4-inch-thick pieces
  • 1 cup chipotle BBQ sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1 1/2 cup chicken stock low sodium
Mac and Cheese
  • 1 lb macaroni elbow pasta
  • 6 cups Water
  • 1 1/2 oz butter
  • 1/4 cup all-purpose flour
  • 3 cups Cheddar cheese grated
  • 2 cups pizza mozzarella cheese grated
  • 2 cups milk
  • 1 pinch nutmeg
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

  • 6 cups Water
  • 1 1/2 oz butter
  • 1/4 cup all-purpose flour
  • 3 cups Cheddar cheese grated

  • 1 pinch nutmeg
  • 1/2 tsp paprika
  • 1 tsp salt

Instructions
  1. Add all ingredients for the Pulled Pork to the Inner Pot of the Instant Pot.
  2. Secure the lid for pressure cooking. Select PRESSURE COOK, set time to 40 minutes and press START.
  3. When the program ends leave for Natural Release and press CANCEL.
  4. When pressure has fully released, open the lid. Take the pork pieces out. Pull the meat with the help of two forks. Mix pork with the sauce remaining in the pot or with additional Chipotle BBQ Sauce and keep warm.
  5. Clean the Inner Pot after it is cold enough to be safely handled. Add water and macaroni to the pot for the Mac and Cheese and stir.
  6. Secure lid for pressure cooking. Select PRESSURE COOK-Pressure Level High, set time to 1 minute and press START.
  7. Allow for 5 minute Natural Release, then Quick Release remaining pressure. Press CANCEL to turn off. Rinse pasta with cold water in a strainer and set aside.
  8. Warm milk slightly in a saucepan.
  9. Select SAUTÉ-LOW set time to 30 minutes, then press START.
  10. Add the butter in the Inner Pot. When butter starts to sizzle add flour. Stir with a whisk to prepare a roux. Add flour before butter turns to brown and cook only for a few minutes to cook out the raw taste.
  11. Before flour starts to change color stir in milk by whisking continuously to prevent any lumps.
  12. Add nutmeg, paprika, salt and cook for 3 minutes.
  13. Add cheese and stir.
  14. After cheese is melted mix in pasta. Select CANCEL. Enjoy your Mac and Cheese with Pulled Pork.
Recipe Notes

Optional: In order to reduce the sauce of the pork remaining in the pot, Select SAUTÉ-LOW, then press START. Let the sauce simmer until desired consistency.
