  • 1 cup sour cream

Instructions
  1. Shred potatoes on a box grater into a large bowl filled with cold water. Continue until all potatoes are shredded.
  2. Soak the shredded potatoes in cold water for 30 minutes. Pour through a fine mesh strainer and squeeze out any remaining liquid. The potatoes should be very dry. Add to a large, dry mixing bowl. This should yield about 8 cups.
  3. Shred the yellow onion on the box grater. Add the onion, eggs, salt, baking powder, and flour to the potato bowl.Mix until combined.
  4. Preheat the 6-in-1 Grill on the AIR FRY function at 400°F. Lightly coat the air fryer tray with olive oil spray.
  5. Dollop ½ cup of latke batter into a circle, keeping each latke one inch away from another. Do not crowd the air fryer tray. Spray the tops with olive oil spray.
  6. AIR FRY at 400°F for 10 – 12 minutes, until golden brown and slightly crispy. Sprinkle with salt immediately after cooking. Continue cooking in batches until all latkes are done.
  7. Serve latkes warm with a side of applesauce and sour cream. Enjoy!
