Ingredients
- 2 large ripe plantains
- 1¼ cup cornmeal
- pinch of salt
- Water only if you think it is necessary
- Mashed Beans
- Oaxaca-type cheese
- avocado oil

Instructions
- Boil the plantains with enough water for 15 minutes or until they are soft. Let cool slightly.
- Transfer to a bowl and flatten with a potato masher and add flour little by little until a manageable dough forms. If you think it necessary, add more water.
- Using a tortilla press, make tortillas and fill with beans and Oaxaca-type cheese. Brush or spray with avocado oil.
- On the Instant Vortex control panel, press Air Fry, set time to 10 Minutes and temperature to 375°F (190°C). Press Start.
- When Add Food appears on the display, add the quesadillas and close the tray.
- When Turn Food appears on the display, flip and, if necessary, spray with more oil.
- Serve and accompany with sour cream, cotija cheese, lettuce, and hot sauce.
