Pineapple Salmon with Peppers

Ingredients
- 4 6 oz salmon fillets
- 1 can (13 oz) can pineapple rings
- 1 red bell pepper large dice
- 1 Orange Bell Pepper large dice
- 1 yellow bell pepper large dice
- ½ red onion large dice
- 1 tbsp olive oil
- 1 scallion minced
- 1 inch fresh ginger grated
- ¾ cup pineapple juice
- 2 tbsp honey
- 1 tsp salt
- Salt as needed

- In a large bowl, combine the grated ginger, pineapple juice, honey, and salt. Add the salmon fillets and refrigerate for 30 minutes.
- Meanwhile, toss the bell peppers and red onions with the olive oil and sprinkle with salt.
- Place the peppers on one side of the air fryer basket. Place the salmon on the other side of the air fryer basket and top the salmon with slices of pineapple. Air Fry at 400°F / 190°C for 12-14 Minutes, or until the salmon is cooked through and golden on top.
- Serve the salmon with the pineapple slices, pepper mixture on the side, and top with the minced scallion.
