  • 1 tablespoon coconut oil
  • 2 eggs
  • 1 1/4 cup coconut cream
  • 1/2 cup honey
  • 1 1/4 cup pine nuts
  • Chocolate Ganache Topping optional

Instructions
  1. Using a paper towel, coat the inside of a springform cake pan or oven proof casserole pan with coconut oil.
  2. Line the bottom and sides of the pan with parchment paper and set aside.
  3. Put the eggs, cream, and honey into a blender and mix, scraping down the sides as needed, until completely smooth. Pour the mixture into the pan.
  4. Pour 1 cup of water into the Instant Pot and place the trivet inside. Place the pan on top of the trivet and close the lid tightly.
  5. Press Manual and adjust time to 25 minutes pressure cooking. When the timer ends, let pressure naturally release.
  6. Open the lid and carefully lift out the trivet and place the pan on a cooling rack for 30-45 minutes.
  7. When cooled, invert the pan onto a platter, carefully lift out the parchment paper from the side.
  8. Invert it again onto another platter, loosely cover and refrigerate overnight.
  9. If you are using chocolate ganache topping, you can make it before serving, let it cool a little and cover the Pine Nuts Mousse and serve immediately.
  10. Alternatively, you can cover with coconut crème fraîche and top with roasted pine nuts! Enjoy!

    Author, please re-write this recipe to correct errors. The ingredients should be listed in the order in which they’re used, coconut oil should be listed first. And the pine nuts – do they get blended with the eggs, cream & honey, or are they for the topping? I’d like to try this but I wouldn’t know if I’m making it right the way it’s currently written.

    Thanks for the quick response. So, the 1 1/4 c pine nuts don’t get pureed with the eggs honey & cream, and are only for an optional topping?

    So the pine nuts are only for the top. Step 3 you’re just mixing the eggs, cream and honey together.

    On Dr Karen’s website, the pine nuts go in the blender with the eggs, cream & honey. Additional nuts on top are optional.
