Philly Cheesesteak Sandwiches

A great way to stretch the value of steak is to make it into sandwiches. This recipe makes tender steak sandwiches so delicious you’ll wish you had made a double batch. The jalapeño juice adds a ton of flavor to the meat without any of the heat. If you want to melt the provolone cheese at the end, place sandwiches on a foil-lined baking sheet and broil in oven 2 minutes. Ingredients
- 2 tablespoons olive oil
- 1 pound thinly sliced sirloin steak
- 1 medium green bell pepper seeded and sliced into 1/4"-thick slices
- 1 medium red bell pepper seeded and sliced into 1/4"-thick slices
- 1/2 medium white onion peeled and sliced into 1/2"-thick slices
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup jalapeño juice from a jar of pickled jalapeños
- 3/4 cup beef broth
- 4 hoagie rolls toasted
- 1/3 cup sliced banana peppers
- 4 (1-ounce) slices provolone cheese

- This recipe uses provolone, which is mild and great for melting. Feel free to use any cheese of your choice. You may also omit the sliced cheese and use processed Cheddar cheese such as Cheez Whiz Cheese Sauce.
- Press the Sauté button on an Instant Pot® and allow to heat until the display reads Hot. Add olive oil and steak to the pot. Sauté 5 minutes until meat is no longer pink. Add bell peppers and onion and continue sautéing until vegetables begin to soften, about 1 Minute.
- Sprinkle seasoned salt, salt, and black pepper in the pot. Pour in jalapeño juice and broth, then press the Cancel button. Place the lid on the Instant Pot® and click into place to close. Press the Pressure Cook button and adjust the timer to 5 Minutes. When the timer beeps, let the pressure release naturally for 4 Minutes, then quick-release any remaining pressure until float valve drops. Unlock lid.
- Use a slotted spoon or tongs to pick up meat and vegetables and place even amounts on each roll. Top with banana peppers, then provolone. Serve warm.
