Ingredients
  • 1 egg white
  • 1 egg
  • 4 tbsp coconut oil
  • 7-8 tbsp sweetener can be monk fruit, coconut sugar, or panela
  • 2 ¾ tbsp (50 g) greek yogurt
  • cup (65 ml) orange juice
  • Zest of 1 orange
  • cinnamon to taste
  • 1 ¾ cups (220 g) oat flour
  • 1 tsp baking powder or baking soda

Instructions
  1. In a bowl, combine the egg along with the egg white, liquid coconut oil, sweetener, Greek yogurt, orange juice, zest of 1 orange, and cinnamon. Mix very well.
  2. Sift the flour and add little by little to the rest of the ingredients.
  3. If the consistency is too thick, add a bit of water or orange juice. If it is too runny, add a bit more flour.
  4. Pour the batter into pre-greased oven-safe muffin molds (preferably silicone).
  5. On the Instant Vortex control panel, press Bake and then set time to 10 Minutes and temperature to 340˚F (170˚C). Press Start.
  6. Once Add Food appears on the display, open the basket and add the muffins. Close. It is important to check how the muffins are doing every 3 Minutes.
  7. When ready, let cool. Turn the muffins upside down and return to the Instant Vortex for approximately 5 Minutes at 338 ˚F (170˚C) to brown the bottoms.
