Ingredients
For roasted carrots:
  • 2 pounds rainbow carrots
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp cumin seed
  • 1/2 tsp coriander seeds
  • 1/4 tsp freshly ground black pepper
For the tahini sauce:
  • 2 tbsp tahini
  • 1 garlic clove minced
  • 1/2 tsp maple syrup
  • 1/4 tsp sea salt
  • 2 tbsp fresh lemon juice
  • 1 tbsp extra-virgin olive oil
Optional:
  • 1/4 cup pomegranates on top for garnish
  • 1 tsp sumac on top for garnish

Instructions
  1. In a small bowl, whisk together olive oil, salt, cumin seed, coriander seeds, and black pepper in a bowl until thoroughly combined.
  2. Toss the carrots and the oil mixture together in a large bowl until evenly coated.
  3. Place the carrots on the prepared baking sheet on the baking tray.
  4. Press Select Roast on the Omni, then set the temperature to 425°F and set time to 15 minutes. Press START.
  5. Once the Omni is preheated, insert the cooking pan on the Roast/Bake Level into the Omni.
  6. Meanwhile, whisk together the tahini, lemon juice, olive oil, minced garlic, maple syrup and salt in a small bowl.
  7. After the cooking cycle is finished, remove the baking tray.
  8. Plate the carrots and drizzle the sauce on top.
  9. Garnish with pomegranates and sprinkle some sumac on top if you desire. Serve any leftover sauce on the side.
