Ingredients
  • 0.8lb pizza doughdefrosted
  • 1tbsp corn meal
For the Pizza Sauce
  • 1tsp tomato paste
  • 1/2cup tomato sauce
  • 1tsp garlicminced
  • 1tbsp onionminced
  • 1tsp onion powder
  • 1tsp garlic powder
  • 1tsp paprika
  • 2tbsp olive oil
  • 1/4tsp salt
  • 1tsp dried thyme
Toppings
  • 1/2cup cheese curds(or 1 cup pizza mozzarella, grated)
  • 1cup Pizza Mozzarellagrated
  • 1/2 red onionthinly sliced
  • 1/2 Zucchinithinly sliced in rounds
  • 1/2 Eggplantthinly sliced in rounds
  • 1/2 red peppersliced in strips.
  • olive oil
Instructions
  1. Add olive oil to a sauté pan. When the oil is hot, sauté onions and garlic until they are soft. Turn off the heat.
  2. Add tomato paste to the pan and stir. Add all other ingredients for the sauce to the pan and stir well to combine. Set aside.
  3. Spread oil on the bottom of the cooking pan. Evenly sprinkle corn meal on the tray.
  4. Cover your fingers with olive oil. Starting from the middle, stretch and extend the pizza dough carefully by hand according to the size of the tray.
  5. Spread the pizza sauce on top of the dough, leaving at least 1 inch space on the sides. Sprinkle cheese curds on top of the sauce.
  6. Arrange eggplant and zucchini slices, side by side, according to your taste.
  7. Arrange red onion slices on top of the vegetables.
  8. Sprinkle some red pepper strips on top.
  9. Drizzle some oil on top of the pizza, according to your taste.
  10. Sprinkle 1 cup mozzarella cheese on top of the toppings.
  11. Select BAKE function on oven. Set temperature to 450°F and set time to 7 minutes. Press START.
  12. When the oven is preheated, place the cooking pan at the Bake level of the oven.
  13. Pizza will be ready when the dough rises, sides are browned and cheese on top developed nice brown spots.
  14. When the program ends, take the pizza out on a rack or hot food-safe cutting board. Let your pizza rest for 5-10 minutes before cutting and serving.
Recipe Notes

Optional: Frozen corn kernels can be sprinkled on top of the vegetables to add some sweetness.

Chef`s Tips:
1. Greasing fingers before touching would prevent dough from sticking to your hands.
2. It may be hard to stretch if the dough is too cold. If it is hard to shape, leave the dough at room temperature for 10 minutes.
