  • 1/2 tsp cumin
  • 1 tsp onion powder
  • 1 tsp fresh lemon juice
Vegetables:
  • 1 bell peppers - cut into 1” pieces
  • 1 large white onion – cut into 1” pieces
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions
  1. In a large bowl, prepare the lamb marinade by whisking all the ingredients together. Olive oil, lemon juice, minced garlic, paprika, cumin, onion powder, salt and pepper.
  2. Add the lamb pieces to the marinade and toss well to fully coat the lamb. Cover with plastic wrap and let sit in the fridge for at least 1 hour.
  3. In a large bowl, prepare the vegetables by adding the bell peppers, onion, olive oil, salt and pepper. Toss the vegetables well to fully coat them in the seasoning.
  4. Prepare the skewers by threading two pieces of lamb onto the skewer, followed by two pieces of onion, one piece of green pepper, and another two pieces of onion. Repeat this sequence once and end the skewer with 2 pieces of lamb.
  5. Place the skewers on a rack (if you have one) or place them in the Air Fryer Basket.
  6. Select Roast, set temperature to 400°F, and set time to 18 minutes, then press START.
  7. When the oven has preheated, insert the rack or basket at the Roast level. If using the basket, turn kebabs halfway.
  8. When program has finished, remove from oven. Use caution as skewer rods will be hot.
  9. Serve with your favorite sides like couscous, hummus and pita bread.
