Ingredients
  • 2cups carrotgrated
  • 1cup flour
  • 1/4cup melted butter
  • 3 eggs
  • 3/4cup brown sugar
  • 1tsp cinnamon
  • 1tsp nutmeg
  • 1tbsp baking powder
  • 1tbsp vanilla extract
Cream Cheese Frosting:
  • 4cups Icing sugar
  • 1cup Plain cream cheese
  • 1/4cup butter
  • 1tsp Vanilla
Instructions
  1. In a large bowl, add carrots, flour, baking powder, cinnamon, and nutmeg. Mix well.
  2. In a separate bowl, beat eggs and mix together with, melted butter, vanilla and brown sugar.
  3. Add the wet ingredients to the carrot mixture and mix until fully incorporated.
  4. Pour batter into a greased 10 x 10 inch cake pan.
  5. Ensure rack is at Bake level. Select Bake. Set temperature to 365°F and set time for 30 minutes. When oven is preheated insert the cake pan into the oven.
  6. When cooking time is completed, carefully remove the cake to a cooling rack.
  7. Let cake cool completely before topping with icing.
  8. Cream Cheese Frosting: Combine all the cream cheese frosting ingredients in a bowl and beat with hand mixer until smooth and creamy.
