Instructions
  1. In a large measuring cup, whisk together the eggs, milk, salt, and pepper.
  2. Mix your filling ingredients in two separate bowls. In the first bowl, combine sausage and cheese. In the second bowl, combine spinach, red pepper, and green onion.
  3. Spray the mini muffin pan with cooking spray.
  4. In the muffin pan, divide the sausage and cheese fillings into the cups, filling only halfway.
  5. Pour the egg mixture into the cups, filling almost to the top.
  6. Preheat the oven; select Bake – 350°F for 8 minutes. Press START.
  7. When preheated, place the muffin pan on the baking tray, and carefully insert it into the oven at the bake level.
  8. When cook time is completed, carefully remove from the oven, and let rest for 5 minutes before removing the egg bites from pan.
  9. Spray the muffin pan again, and divide the spinach and pepper filling in the cups, pour over the egg mixture, and bake the second batch of egg bites.
  10. Preheat the oven; select Bake – 350° for 8 minutes. Press START.
  11. When preheated, place the muffin pan on the baking tray, and carefully insert it into the oven at the bake level.
  12. When cook time is completed, carefully remove from the oven, and let rest for 5 minutes before removing the egg bites from pan.
