Ingredients
- 50 ml oil ¼ cup
- 4 large pieces of meat 1 lb/½ kg
- 1 cup chicha de jora corn beer
- 1 large onion diced
- 1½ tbsp ground garlic or 2½ garlic cloves finely minced
- 3 tbsp ground ají panca
- ½ cup ground coriander
- 1 tsp pepper
- 1 tsp cumin
- 1 tsp oregano
- ¼ cup grated loche squash
- ¼ cup peas

- White rice, salsa criolla, and beans

Instructions
- Marinate the meat with the corn beer.
- Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 10 Minutes . Add the oil. Once hot, add the onion, then the garlic. Stir fry 3 minutes or until the onion is translucent. Add the ají panca, cook for a couple of minutes, then add the coriander. And lastly, add the pepper, cumin, and oregano. Press Cancel .
- Put in the marinated meat along with half of the corn beer, grated loche squash, and peas. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Meat/Stew and set time to 15 Minutes.
- Finally, serve the beef stew with rice and, optionally, also beans and salsa criolla.
