Ingredients
  • 50 ml (¼ cup) oil
  • 4 large pieces of meat 1 lb/½ kg
  • 1 cup chicha de jora ( corn beer)
  • 1 large onion, diced
  • tbsp ground garlic or 2½ garlic cloves finely minced
  • 3 tbsp ground ají panca
  • ½ cup ground coriander
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • ¼ cup grated loche squash
  • ¼ cup peas
Optional for serving:
  • White rice, salsa criolla, and beans

Instructions
  1. Marinate the meat with the corn beer.
  2. Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 10 Minutes . Add the oil. Once hot, add the onion, then the garlic. Stir fry 3 minutes or until the onion is translucent. Add the ají panca, cook for a couple of minutes, then add the coriander. And lastly, add the pepper, cumin, and oregano. Press Cancel .
  3. Put in the marinated meat along with half of the corn beer, grated loche squash, and peas. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Meat/Stew and set time to 15 Minutes.
  4. Finally, serve the beef stew with rice and, optionally, also beans and salsa criolla.
