Absolutely love this flavorful recipe! I made a rotisserie chicken last night and placed over a bed of this Risotto and it was a hit!!

Close to perfect (there’s always got to be some room to improve). And so quick and easy.
I put the rice in right after the shallots as I was always accustomed, using the traditional endless stirring method, to coating the rice with oil before adding the liquid.
It’s like an act of faith that you can close the lid on raw rice and open it after releasing the pressure in six minutes and there it is, al dente risotto.
This was a Quick and easy recipe. Will definitely make this again

I make risotto with mushrooms all the time this is better than my own. It makes me want to cook because you do not spend hours in the kitchen preparing you prepare pot/set, you let it cook while you’re relaxing it’s wonderful

Loved it. Added white wine, used arugula instead of spinach. Will use just a bit less liquid next time. Cant have enough butter or parmesan.
The recipe said to “Select Manual” and I must have looked for a Manual button for 10 minutes. It should say, “Select Pressure Cook.” This is only the second time I’ve used the Instant Pot, and the first time using a recipe from this app, so weird things like not being completely accurate on what to do make using this device a less than pleasant experience. I’m already overwhelmed by the number of buttons and scared to death it will explode if I use it improperly. The risotto was AMAZING!!!

This was the first dish I made using my Instant Pot and I was amazed at how rich it tasted.
You might want to consider doubling the recipe if you tend to eat a lot, as the portions arw rather small.
I hard boiled 6 eggs for my first try using the IP. Came out perfect. Made this risotto and it came out perfect. We arent fans of thyme so it seemed a bit overwhelming. Will leave out next time, maybe increase red pepper flakes and use wine next time. But i will make it again.
This was the perfect side to some leftover shredded pork we had. So easy and yummy! I used kale vs spinach since that’s what i had on hand.
Thank you to ustexasjoe for explaining that manual means pressure cook – these recipes really should show what model is used – im a new user with a 3 qt duo mini and i dont know if i should cut the volume in half.
I doubled this recipe, did 3.5 cups chicken stock and half a cup dry white wine, so good! Super easy with limited needed prep and oh so delicious!
I love this! I change it up with bacon, or leeks, or change of cheese. Risotto is now super easy.
Very good. So easy to make, and only one dirty pan….what could be better? Flavor is perfect on it’s own.
I have friends that love mushrooms, so I used this as a side dish to my cream of mushroom soup and they loved it!

Does doubling the recipe effect the time?
I’ve always struggled to get risotto right. This method results in near perfection!
Made this in the 3 quart pot but just cut the ingredients in half. Also added chopped artichokes and sun-dried tomatoes. It was surprisingly good and oh so easy. Follow the directions for timing.
So easy and so delious! I added Trader Joes spicy Chicken Sausage with the spinach and made it a complete meal.
Wonderful recipe and super easy. Next time i will not use red pepper. It overwhelmed other flavors.
I freaked when lifting the lid to see it REALLY had cooked that quickly. My husband Rick and I chose this as our maiden Instant Pot meal, as we first had risotto in Cambridge, England and it brought back great memories. Delicious, by the way.
First time having Risotto and it was good.
I used bella mushrooms since the store i went to didn’t have cremini mushrooms and used onions instead of shallots and it turned out amazing! Can’t compare it to the recipe as is since I haven’t made it exactly to the recipe.
(This was my first InstantPot endeavor and all I can say is I am super excited for many more to come agter that)

Sooo good. I added 2.5c of broth and 1.25c of regular rice. Also added more parm and no red pepper since i have a little one. Its delicious!

I cook risoto every week and this was the third receipe I cooked with Instant Pot. Easy to prepare and delicious!
I used peas instead of red peppers (added after I released the pressure at the end), powder garlic instead of the natural and mix of mushrooms. Just perfect!
Great recipy! Turned out delicious. Definitely surprised my guests. Couldnt find that type of rice so i used sushi rice. Another shlrt grain rice. Turned slightly dry for a risotto, so i may nee to add slightly more broth or some extra butter. Highly recommended

Yes you would have to adapt as different grans have different cooking times. We have a cooking time table available on our website that is a good resource to see if recipe times need to be adjusted.
This was a dream. I haven’t made risotto in years bc it’s too much work to stand there and stir forever. This turned out perfectly, even with boring brown mushrooms.

Hey there, the recipe is for risotto? But there’s no risotto listed as an ingredient. Just A rice isn’t risotto a pasta?
Risotto is a rice. The grain of rice used is called Arborio
Quick question…if you double the recipe, what is the suggestion for an adjusted cooking time?

There have been several questions regarding adjustments for cooking time when doubling this recipe. Could you please address this? I would like to double the recipe also, and want to know how to adjust the time accordingly. Thank you for a delicious recipe- I served it to friends for dinner and it was a huge hit! I used to be intimidated by my Instant Pot and it sat in it’s box unopened for nearly a year before I was brave enough to try it. Now I use it all the time! Thanks for all your help and encouragement…
Hi Dawn,
Most recipes do not need a time adjustment when doubling a recipe. Please note that it will take longer to preheat and come to pressure when cooking larger amounts of food. Also with expandable foods please do not fill more than 1/2 way mark with rice.
Delicious! I doubled it and it went fine. I wonder if you could triple it in the duo plus 60….

Worked out great! I doubled the amount and accidentally let it cook for 2min longer (8 total) and was worried but it was fine! Very easy and quick! I put half the thyme in because I made something once with thyme and felt like it overpowered the dish. As an fyi for anyone else not crazy about thyme- Using half the thyme still resulted in an extra layer of flavour without it distinctly tasting like thyme.

First time making risotto and I am still new to the Instant pot. This came our perfect and very tasty, it will be a favourite for sure.
This was a quick, delicious meal that I modified a bit to make it vegan. I used vegan butter and left off the parmesan. To add more flavor I added a bit of chipotle sauce. This recipe is very flexible so it is something I plan to use again.

I think it was more dificult gathering the ingredients vs actually cooking it.
Super quick and easy, I used chestnut mushrooms and left out the parmesan to make it vegan x
I added more crushed pepper and really liked it. Perhaps a little bit more of liquid for softer rice.
Not sure what i did wrong, but it was not creamy; taste was a mediocre. How do i get it creamier?

My family loved it! I added some diced chicken breast to make a non-vegetarian version.
Overall, very good. May substitute a few things, such as chicken broth, and maybe add some wine before the broth. Also, I’ve seen a few comments about it not having much flavor. Instead of adding the rice right as you are going to pressure cook, tey toasting the rice for a few minutes to make them slightly translucent. It will allow the rice to soak up more of the flavors

This recipe has become a staple on my weekly menu. Recently I have been adding about half a tablespoon of curry powder and it made it even more delicious.
This is one kf my favorite recioes. I pump uo all the seasonings, esoecially the crushed red peoper. So eaay and delicious.
I never made risotto before because it sounded like too much work but the instant pot makes everything easier so I decided to try. My son and I are vegan (1st 2 months). We made this recipe with all vegan ingredients. I always double the recipe because we like leftovers for lunch the next day. After it was done, I added canned peas. It was so good and so easy. As far as spices, I thought it was fine but my son adds hot sauce to everything as he did with the risotto.
This is a family favourite! So easy and the perfect dish. I’m totally going to add peas next time too!
