Ingredients
  • 2slices of bread of your choice I used ciabatta
  • 1 ripe avocado
  • ½cup Manchego cheese
For the pico de gallo salsa:
  • ½cup sliced cherry tomatoes
  • 2tbsp coriander finely chopped
  • 1serrano pepper deveined and finely chopped
  • ½ lemon juice
  • 2tbsp olive oil
  • Salt to taste
Instructions
  1. Mix sauce ingredients and set aside.
  2. Cut the avocado into slices and place it on top of the bread; then add the Manchego cheese.
  3. On the Instant Vortex control panel, press Roast, set the time to 6 Minutes and temperature to 400˚F (205˚C). Press Start.
  4. Serve the bread hot, accompany with the sauce and enjoy!
