Ingredients
- 2 slices of bread of your choice I used ciabatta
- 1 ripe avocado
- ½ cup Manchego cheese
For the pico de gallo salsa:
- ½ cup sliced cherry tomatoes
- 2 tbsp coriander finely chopped
- 1 serrano pepper deveined and finely chopped
- ½ lemon juice
- 2 tbsp olive oil
- salt to taste

Instructions
- Mix sauce ingredients and set aside.
- Cut the avocado into slices and place it on top of the bread; then add the Manchego cheese.
- On the Instant Vortex control panel, press Roast, set the time to 6 Minutes and temperature to 400˚F (205˚C). Press Start.
- Serve the bread hot, accompany with the sauce and enjoy!
