  • neutral oil
  • Water
  • 1 orange peel
  • 2 bay leaves
  • 2 cloves garlic
  • ½ onion
For the marinade:
  • 6 pieces of tomato
  • 6 guajillo chiles deveined and soaked
  • 3 ancho chiles deveined and soaked
  • 1 clove garlic
  • 1 pinch of cumin
Extra ingredients for serving (optional):
  • cooked white rice

Instructions
  1. Season the ribs on each side with salt and pepper. Place the stainless steel inner pot inside the Instant Pot®. Press Saute. Heat the oil and sear the ribs on all sides, doing so little by little, so that the pot does not get cold and instead of searing and taking on color, the ribs lose their juice.
  2. Remove and place in a bowl as they become seared. Set aside.
  3. Once all are sealed, put all the ribs back in the pot. Recover the juices from the bowl, cover with water just above the ribs, and add the orange peel, bay leaf, garlic, and onion.
  4. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set time to 35 Minutes.
  5. While the ribs are cooking, prepare the marinade. Blend all the ingredients with a bit of water. Strain everything over the ribs when ready, season with salt and pepper, and cook for about 5-8 Minutes on Saute or until marinade thickens slightly.
  6. Serve with some white rice.
