Lentils, Rice and Spices
  • 1tbsp olive oil
  • 1 green onion (only green partfinely chopped)
  • 1 carrotgrated
  • 1tsp fresh gingergrated
  • ½tsp curry powder
  • ½tsp pepper
  • ¼tsp cinnamon powder
  • ½tsp salt
  • ½cup 1/8 in (4 mm) lentils
  • ½cup white rice
  • cups water or vegetable or bone broth
  1. Add the oil, chive, carrot, condiments, lentils, and rice to the Instant Pot inner pot. Stir.
  2. Press Saute and set time to 4 Minutes. Stir with wooden spoon until time is up.
  3. Then add water. Press Pressure Cook and set time to 8 Minutes.
  4. Once done, press pressure button to release all the air and open the lid.
  5. You can serve immediately along with vegetables or let cool, store in a glass storage container, and put in the refrigerator.
