Ingredients
- 1 tbsp olive oil
- 1 green onion (only green part finely chopped)
- 1 carrot grated
- 1 tsp fresh ginger grated
- ½ tsp curry powder
- ½ tsp pepper
- ¼ tsp cinnamon powder
- ½ tsp salt
- ½ cup 1/8 in (4 mm) lentils
- ½ cup white rice
- 1¾ cups water or vegetable or bone broth

Instructions
- Add the oil, chive, carrot, condiments, lentils, and rice to the Instant Pot inner pot. Stir.
- Press Saute and set time to 4 Minutes. Stir with wooden spoon until time is up.
- Then add water. Press Pressure Cook and set time to 8 Minutes.
- Once done, press pressure button to release all the air and open the lid.
- You can serve immediately along with vegetables or let cool, store in a glass storage container, and put in the refrigerator.
