  • 2 garlic cloves minced

  • 1 teaspoon lemon rind grated
  • 1/2 teaspoon table salt
  • 1/4 teaspoon black pepper freshly ground

  • 2 lb spaghetti squash washed and cuthalf
  • 1 cup Water

Instructions
  1. Scrape membranes from squash halves with a spoon, reserving seeds to roast, if desired.
  2. Place steam rack, with handles in the up position, in the inner pot of a 6-quart Instant Pot; pour in 1 cup water. Place squash halves, cut sides up, on rack.
  3. Close and lock the lid of the Instant Pot. Turn the steam release handle to “Sealing” position. Cook at High Pressure for 9 minutes. Open the cooker using Quick Pressure Release. Lift squash from the cooker using rack handles. Set aside on rack to cool.
  4. While squash cools, pour out water from the inner pot; rinse with hot water, and dry thoroughly. Return pot to the cooker.
  5. When squash is cool enough to handle, use a fork to remove spaghetti-like strands, and place in a bowl.
  6. Add butter to inner pot. Press Sauté. When butter melts, add onion and garlic to pot; cook, stirring constantly, 2 minutes or until tender. Press Cancel to turn cooker off. Add squash strands to pot; stir 2 minutes or until thoroughly heated. Return squash to bowl; add Parmesan cheese and remaining ingredients, and toss well.

    We made a ton of meatballs and grabbed two batches of the sauce to make them in, then vacuum sealed them in meal-sized containers. The sauce from the recipe paired with the flavors of fresh sage & fresh minced garlic/onion were stupendous. Recipes like this are what have made me love my Instant Pot.

    Super easy and delicious… Only advice I would make is make some chicken or something with it cuz of the portion was very small.

    This is super delicious. I love the lemony flavor, without the sour. Try it with some crumbled goat cheese.—So good!

    I added a whole sweet onion (in place of 1/4 cup, and 1 sweet red pepper (both diced). An extra tbsp of butter and parsley. Loved it.

    Made this for the 1st time. Tirned out pretty good. Next time I’m going to add some lemon juice for more sage. Could taste the lemon, just couldn’t taste much if any of the sage.
    Will be making again.
