Lemon Infused Mediterranean Chicken Wrap

- 0.5 lbs chicken breast boneless, skinless
- 1 Preserved Lemon sliced or ½ lemon
- 3 thyme sprig
- 1 tbsp salt
- 1 cup Water
- 1/2 tsp salt
- ½ tsp black pepper
- ½ tsp thyme dried
- 1 tbsp olive oil
- 1 Flat Bread
- 1/2 cup Mixed Green or chopped lettuce
- 2 tbsp Caesar Dressing
- 3 Fresh Tomato Slices

- Prepare brine for the chicken by mixing 1 tbs salt, 1 cup water, thyme Sprigs, and lemon slices in a cup. Submerge chicken in the brine and let it sit in the fridge at least 30 Minutes, maximum overnight.
- Rinse, drain chicken breast and pat dry with a paper towel.
- In a small cup prepare a rub for the breast by mixing ½ tsp salt, black pepper, dried thyme, and olive oil.
- Rub all surfaces of the chicken with the spice, herb and oil mix.
- Select Roast on Vortex AF. Set the temperature to 380°F and set the time to 20 Minutes. Press Start.
- With the Add Food alarm, place chicken breast in the AF basket. Cook for around 13 Minutes, until the internal temperature exceeds 165°F.
- Take chicken out in a cutting board.
- Place flat bread in the AF basket to warm for 2-3 Minutes. Press Cancel.
- Slice chicken breast biased into 1/2” thick slices.
- Lay out breast pieces on the flat bread. Top with tomato slices. Add Caesar dressing and mixed greens on top.
- Fold right and left sides of the bread on top of each other to form a cone shaped wrap. Use a toothpick if necessary.
Recipe Notes
Chef`s Tip: Double chicken amount and use three flat breads to prepare three wraps.
