  • 1 Preserved Lemon sliced or ½ lemon
  • 3 thyme sprig
  • 1 tbsp salt
  • 1 cup Water
  • 1/2 tsp salt
  • ½ tsp black pepper
  • ½ tsp thyme dried
  • 1 tbsp olive oil
  • 1 Flat Bread
  • 1/2 cup Mixed Green or chopped lettuce
  • 2 tbsp Caesar Dressing
  • 3 Fresh Tomato Slices

Instructions
  1. Prepare brine for the chicken by mixing 1 tbs salt, 1 cup water, thyme Sprigs, and lemon slices in a cup. Submerge chicken in the brine and let it sit in the fridge at least 30 Minutes, maximum overnight.
  2. Rinse, drain chicken breast and pat dry with a paper towel.
  3. In a small cup prepare a rub for the breast by mixing ½ tsp salt, black pepper, dried thyme, and olive oil.
  4. Rub all surfaces of the chicken with the spice, herb and oil mix.
  5. Select Roast on Vortex AF. Set the temperature to 380°F and set the time to 20 Minutes. Press Start.
  6. With the Add Food alarm, place chicken breast in the AF basket. Cook for around 13 Minutes, until the internal temperature exceeds 165°F.
  7. Take chicken out in a cutting board.
  8. Place flat bread in the AF basket to warm for 2-3 Minutes. Press Cancel.
  9. Slice chicken breast biased into 1/2” thick slices.
  10. Lay out breast pieces on the flat bread. Top with tomato slices. Add Caesar dressing and mixed greens on top.
  11. Fold right and left sides of the bread on top of each other to form a cone shaped wrap. Use a toothpick if necessary.
Recipe Notes

Chef`s Tip: Double chicken amount and use three flat breads to prepare three wraps.
