  • 1 cup shredded Cheddar cheese
  • 2 tbsp fresh chives chopped
  • 2 tbsp onion small diced
  • 3 large eggs beaten
  • 1 1/2 cups panko
  • ½ cup AP flour
  • 2 tbsp freshly grated Parmesan for garnish optional
  • 1 tsp parsley flakes for garnish optional
  • Salt and pepper to taste

Instructions
  1. Place the bacon slices in the AF basket. Close the AF basket.
  2. Select Air fry set the temperature to 400°F and time for 4 Minutes. Press Start.
  3. Once the AF shows the Turn Food sign, flip the bacon with tongs and close the basket to continue to cook.
  4. Once the food cycle ends, remove the AF basket.
  5. Place the bacon on a cutting board and chop. Put it aside.
  6. Combine mashed potatoes, cheese, chives, onion, and bacon in a large bowl.
  7. Roll the mixture into balls, using a small cookie scoop, forming about 25.
  8. Working one at a time, dip balls into flour first, eggs, lastly, dredge in Panko, pressing to coat and then dipped back in egg wash and then back into the panko again. This double-thick coating is necessary to form a coating barrier to prevent your balls from melting out.
  9. Work in batches and place them on a lined parchment paper tray.
  10. Freeze the balls for 2-3 Hours minimum or overnight.
  11. Select Air fry set the temperature to 400°F and the time for 12 Minutes. Press Start.
  12. Meanwhile, Spray the cooking oil or brush the oil on all sides of each ball.
  13. Once the AF shows the Add Food sign, open the AF basket and place the balls carefully into the AF basket. Close the AF basket.
  14. Once the AF shows the Turn Food sign, flip the balls with tongs and close the basket to continue to cook.
  15. Once the cooking cycle ends, remove the AF basket, and place the balls on a serving plate (work on baches).
  16. Serve immediately, garnished with grating Parmesan and parsley flakes on top, if desired. Enjoy!
