Lazy Lasagna

This Instant Pot Lazy Lasagna recipe comes together fast and easy with the Instant Pot pressure cooker, and your family will love it.

Ingredients
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion chopped
  • 1 tbsp minced Garlic
  • 2 lbs lean ground beef
  • 1 jar pasta sauce
  • 2 cups beef broth
  • 1/4 cup red wine
  • 1 cup Water
  • 1 tbsp Italian seasoning
  • 8 oz uncooked lasagna noodles or other pasta. We used a Campanelle pasta because my kids like the shape
  • 2 cups shredded mozzarella cheese divided
  • 1/4 cup Parmesan cheese
  • 1 cup ricotta cheese

Instructions
  1. Set Instant Pot to SAUTE. Add the olive oil and butter and allow it to sizzle. Add the onions and garlic cook for 2 minutes. Stir regularly.
  2. Add ground beef and cook until about 4 - 5 minutes, or until no longer pink. Drain grease and return to Instant Pot.
  3. Add pasta sauce, beef broth, wine, water and Italian seasonings. Mix well.
  4. Add pasta. Stir to make sure noodles are covered with the liquid.
  5. Set Instant Pot to MANUAL or PRESSURE COOK on HIGH PRESSURE for 20 minutes. Lock lid and make sure vent is closed. When coking time ends, release pressure and wait for steam to completely stop before opening lid.
  6. Stir in cheese, but reserve about 1/2 cup mozzarella cheese if you would like to sprinkle a bit on top of the lasagna when you serve it.

    Hi Amber,

    You can use any wine that you don’t plan on drinking. If you don’t want to use red wine, you could use a substitute. However, depending on what you use, it may change the taste slightly or significantly. If you do plan on using a substitute, do not use red wine vinegar for this recipe. The lasagna will come out with a slightly sour taste to it.

    Used bow ties instead of lasagna and didnt have any red wine on hand so just added more water – turned out great!

    Too much liquid (I’d stick with 2 cups total liquid), and cooking time way too long (try 12-15 minutes instead). As is, this makes a mushy lasagna-like soup.

    Wayyy tooo mushy with all that fluid. Skip out on the water and wine, stick with just the broth. Will b trying again later for sure.

    Noodles were a little mushy. But i did double the noodles and just used pasta sauce and beef broth. No water and no wine.

    Got a burn notice twice on this….had to finish it in the oven. Still turned out really good, but pretty frustrating. I’ve heard from my daughter that pasta dishes in the Instant Pot are extremely difficult.

    Made as directed but had beef broth with red wine in it. Worked out perfect.. not mushy or liquidity.

    Quite soupy…i wasn’t expecting that from the photo. Smells delicious! Having it with company in a few minutes so hopefully it tastes great.

    I added large shell pasta and a layer of fresh spinach
    Didn’t add the cheese yet. Adding parmesan
    mozzarella and riccota.

    I added the cheeses blended them in. On top I put mozzarella in slices then back in the pot to melt

    I added a small bag of frozen corn, 12 Oz of bow tie pasta, and used 3 1/4c of beef broth only. Pressure cooked for 18 min. The pasta was mushy so next time I will only do 16 min. But I still enjoyed it and will make it again.

    I omitted the red wine and water and cooked for 15 minutes, and this turned out perfectly. Tasted just like regular lasagna.
