For cooking eggs:
  • 6 eggs
  • 1 1/2 cups Water
For the egg salad
  • 1/4 cup mayonnaise
  • 6 hard-boiled eggs peeled and cut into dices (made in Step 1-6)
  • 2 tsp lemon juice
  • 1 tbsp finely chopped chives
  • 3 cooked ham slices diced
  • 1 avocado cubed
  • Kosher salt and black pepper to taste
  • Optional: 1/2 cup arugula, some red onion slices, and
  • 4-5 cherry tomatoes cut in halves for one serving.

Instructions
To Make the Eggs
  1. Pour the water into the Inner Pot. Place a trivet in the pot.
  2. Arrange eggs on the trivet and secure lid for pressure cooking.
  3. Secure lid for pressure cooking. Select PRESSURE COOK-Pressure level HIGH, set time for 5 minutes and then press START.
  4. Allow a 5 minute Natural Release, then Quick Release remaining pressure. Press CANCEL to turn off.
  5. Remove the Pressure Cooking Lid when all pressure has been released.
  6. Remove the eggs carefully from the pot into a bowl of ice water or cold water for 1 minute. Drain well and peel.
For the Egg Salad:
  1. In a medium bowl, whisk together mayonnaise, lemon juice, and chives. Season with salt and pepper.
  2. Add eggs, ham, and avocado and toss gently to combine.
