Zucchini goes amazingly well with tomato sauce. Zucchini has a natural sweetness that comes out when it cooks, complementing the acidity in tomato sauce. Ingredients
- 1/2 cup marinara sauce
- 1/2 cup Water
- 1 tablespoon tomato paste
- 2 teaspoons Italian seasoning blend
- 1/2 teaspoon salt
- 4 medium zucchini ends trimmed, quartered lengthwise and cut into 1/2” thickness
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 2 basil leaves sliced
- 1/4 teaspoon crushed red pepper

Instructions
- Place marinara sauce, water, tomato paste, Italian seasoning, and salt into an Instant Pot® and stir to combine. Add zucchini to the pot.
- Place the lid on the Instant Pot® and click into place to close. Press the Pressure Cook button and adjust the timer to 2 Minutes. When the timer beeps, quick-release the pressure until float valve drops. Unlock lid.
- Sprinkle mozzarella and Parmesan cheese over top. Allow 5 Minutes for cheese to melt from the residual heat. Top with sliced basil and crushed red pepper, then serve.
