  • 5 tbsp sugar
  • 1 pinch salt
  • 1 1/2 tsp cornstarch
  • 1 tbsp lemon juice
FOR THE TOPPING
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk
  • 4 tbsp unsalted butter melted, cool
  • 1 tsp cinnamon ground
  • 1/2 tbsp sugar

Instructions
  1. For the filling, select the SEAR/SAUTÉ Mode . Select the Temp/Time button to set the time to 15 minutes with the knob. Press START.
  2. Add butter to the cooking vessel. When the butter is melted add the peaches, sugar and salt. Cook covered for about 10 minutes until peaches release their juices.
  3. When the program ends select MANUAL/MODE 2 select the Temp/Time button to set the temperature to 375F and the time to 20 minutes with the knob. Select START and cook uncovered until peaches caramelize and develop a golden color. Stir occasionally. Whisk in lemon juice and cornstarch until combined and stir into peach mixture, Press CANCEL. Remove the vessel from the base. Cover and place it on the Dutch Oven Rest.
  4. Adjust oven rack to middle position and heat your oven to 425F.
  5. For the toppings whisk flour, baking soda, baking powder, 5 tbs of sugar and salt in a mixing bowl. Stir in buttermilk, melted butter and form a dough. Do not overmix.
  6. Pinch off dough into rough 1-inch pieces and place on top of hot peach mixture, ½ inch apart. Mix ½ tbsp sugar with 1 tsp cinnamon and sprinkle on top of the dough pieces.
  7. Place the Cooking vessel into the oven and bake for 20 to 23 minutes until the topping is golden brown and the filling has thickened.
  8. Remove the vessel from the oven and place it on the Dutch Oven Rest. Let it cool down for 15 minutes.
  9. Serve with vanilla ice cream and enjoy.
