Ingredients
To prep:
- 2 sweet potatoes yellow or orange
- 2 white potatoes
- 2 tbsp avocado oil
- 1 large clove garlic
- 1 tbsp paprika
- 1 tbsp fresh parsley for garnishing
- Salt and pepper to taste
For the dressing:
- ½ cup plain greek yogurt
- Juice of 1 lemon
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 pinch of oregano powder
- Salt and pepper to taste

Instructions
- Cut the potatoes and sweet potatoes into large cubes. Put in the Instant Pot with enough water to submerge and add salt to taste. Press Pressure Cook for 4 Minutes. Drain and let cool slightly.
- In a bowl, add the oil, grated garlic, paprika, salt, pepper, and parsley and mix well.
- On the Instant Vortex control panel, press Air Fry, then set time to 8 Minutes and temperature to 355˚F (180˚C). Press Start.
- Once this time is up, program for 5 Minutes more at 390ºF (200ºC).
- Mix the ingredients for the yogurt dressing.
- Serve the potatoes with the yogurt and enjoy!
