To prep:
  • 2 sweet potatoes yellow or orange
  • 2 white potatoes
  • 2 tbsp avocado oil
  • 1 large clove garlic
  • 1 tbsp paprika
  • 1 tbsp fresh parsley for garnishing
  • Salt and pepper to taste
For the dressing:
  • ½ cup plain greek yogurt
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 pinch of oregano powder
  • Salt and pepper to taste

Instructions
  1. Cut the potatoes and sweet potatoes into large cubes. Put in the Instant Pot with enough water to submerge and add salt to taste. Press Pressure Cook for 4 Minutes. Drain and let cool slightly.
  2. In a bowl, add the oil, grated garlic, paprika, salt, pepper, and parsley and mix well.
  3. On the Instant Vortex control panel, press Air Fry, then set time to 8 Minutes and temperature to 355˚F (180˚C). Press Start.
  4. Once this time is up, program for 5 Minutes more at 390ºF (200ºC).
  5. Mix the ingredients for the yogurt dressing.
  6. Serve the potatoes with the yogurt and enjoy!
